Smashed Cucumber Salad with Greek Yogurt & Chili Oil
Here’s a quick and easy salad idea for the warmer months. It’s perfect with wholemeal pita or as a side to chicken or lamb. Using unsweetened Greek yoghurt not only boosts your protein and calcium intake but is also lower in carbohydrates, helping to strengthen your muscle and bones and keeps you feeling fuller for longer.
2 Lebanese cucumbers or 1 large cucumber
1/2 cup greek yogurt (unsweetened, low-fat, or full fat)
1 tbsp honey or sweetener
1 1/2 tbsp chili (adjust to taste)
1 small garlic clove, finely minced
1/2 tbsp rice vinegar or lime juice
Salt to taste
Fresh coriander or mint leaves, for garnish (optional)
Cut the cucumbers in half lengthwise, place them cut-size down, and lightly smash with the side of a knife or rolling pin until they crack and split. Slice into bite-sized chunks and set aside.
In a small bowl, mix the Greek yogurt and honey until smooth, then spread it evenly on the bottom of a shallow serving plate.
In a separate bowl, toss the smashed cucumbers with rice vinegar or lime juice, garlic, a small pinch of salt, and a drizzle of chili oil. Keep the dressing light to avoid overpowering the yogurt.
Spoon, the dressed cucumbers over the yogurt base, drizzle with a little extra chili oil if desired, and garnish with fresh coriander or mint.
Serve immediately for the best crunch.
