Pork Lettuce Cups
This Asian inspired entrée is a perfect start to any Summer dinner party. With plenty of vegetables for extra fibre and flavour, and a tangy dressing to finish, this dish is sure to satisfy all taste buds.

Step 1
Heat oil in a frying pan over medium heat. Add onion, garlic and pork mince. Cook for 5 minutes until browned, stirring with a wooden spoon to break down pork into smaller pieces.

Add carrot and cook for a further 3 minutes until soft. Remove from heat.

Stir spring onion, bean sprouts and coriander through pork mixture. Set aside.

In a small dish, combine dressing ingredients and stir together.

To serve, divide mixture between 4 lettuce leaves. Top with dressing and sprinkle with crushed peanuts.
Tip
Chicken mince could be substituted for pork if preferred.
