Lime and Berry Panna Cotta
Try this zesty twist on a traditional panna cotta recipe. The Greek yoghurt will keep you satisfied while providing some additional calcium and good gut bacteria.
In a medium saucepan, over a low heat, combine milk and honey (or maple syrup). Heat, stirring for approx. 6 minutes until just heated through but not simmering. Do not allow to boil. Remove from heat and sprinkle gelatine over the milk. Whisk until gelatine dissolves. Set aside for 10 minutes to cool.
In a large bowl, mix yoghurt, vanilla and zest. Slowly strain milk mixture into yoghurt and stir well until combined. Pour mixture into individual serving cups and place in fridge for 2-3 hours, until set.
Serve panna cotta with berries on top.
